Companion Planting with Potato
Companions (do well together) - Potatoes grow well in the company of strawberries, horseradish, beans, peas, comfrey, nasturtium, nettles and marigolds. They do well with mustard, flax and celery but grow especially well next to chilli and eggplants (brinjal)
Antagonists (don't do well together)
- Tomatoes do not grow well next to potatoes.
- Cucumber, pumpkin, carrot and sunflower also do not grow well with potato.
Tips on Harvesting Potato
- Potatoes can be planted early in the early season to get the first crop then a later variety to get the late season crop
- They grow in full sun and take approximately 2 months from potato eye wedges to harvest.
- The plants make delicate pink flowers. Soon after flowering, the plant will die back.
- After flowering, the plant dies back. This indicates that it is time for the harvest.
- When harvesting potatoes, it is best to do it at sunrise or sunset.
- They are sensitive to bright light. Potatoes go green when exposed to too much light.
- The green tint is a toxin, called solanine. Eating green potatoes are not healthy. This can cause diarrhea, abdominal pain or vomiting.
- Keep potatoes in a paper bag, in the cupboard or in a box to keep them out of the light.
Recipe to Cook Organic Potato
Potato Wedges
- 6-8 potatoes
- Sunflower Oil
- Garlic
- Parsley
- Basil
- Cayenne Pepper
- Salt and pepper (optional)
- Slice the potatoes into ½ inch wedges or rounds.
- Spread them out on a baking tray.
- Rub them with oil.
- Apply the garlic, herbs and spices generously over the sliced potatoes
- Bake them at 400°F for 30-45 minutes. (Depends on heat of oven)
